Gluten and Sugar Free Cinnamon Apple Coffee Cake

Whenever I see "almond flour" and "cake" in the same recipe title, I want to run. Most paleo cakes come out dry. But this one is pretty dang good and really does the trick when you want something sweet, but want to avoid carbs.


Recipe adapted from Healthy Substitute Scrumptious Low Carb Cinnamon Coffee Cake

INGREDIENTS

For the cake:
  • 1 cup almond flour
  • ⅓ cup coconut flour
  • 2 tsp baking powder
  • 4 TBL ground cinnamon
  • pinch of salt
  • 1 sweet apple (gala or equivalent)
  • 5 tbsp ghee
  • 1 tbsp coconut oil
  • 2 TBL banana baby food (or about 1/2 ripe banana)
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp maple extract
For the topping:
  • 2 tbsp ghee (melted)
  • ¼ cup granulated monk fruit sweetener
  • 1 tsp ground cinnamon
  • ¾ cup almond flour
  • ¼ cup pecans, chopped
  • 1 tsp maple extract 

DIRECTIONS:

  1. Pre-heat over to 350* F
  2. In a medium bowl, whisk together almond flour, coconut flour, baking powder, cinnamon, and salt. 
  3. In a separate small bowl use a hand mixer to whip up ghee, coconut oil, vanilla and maple extracts, baby food, and eggs until fluffy and smooth
  4. Transfer the batter to a 9" pie tin
  5. Mix all the topping ingredients together and spoon over cake batter
  6. Bake for approximately 35-55 minutes or until a toothpick inserted comes out clean 
  7. Remove from the oven and allow to cool before serving

BAKER'S NOTES

  • This recipe can be made without the topping which will make it paleo and Whole30 compliant. The cake will not be super sweet, but it is very nicely balanced.
  • You can also make this recipe sweeter by adding 1/4 C monk fruit sweetener or maple syrup to the cake batter. That'd make it more friendly to the sweet tooths :) 
  • I realize baby food is not something that folks have around their pantry (unless they have a baby) but it is a good ingredient to have stocked for easily sweetening desserts such as these. 
  • The original recipe linked above excluded the apples from the cake and instead added them to the topping. It makes for a prettier cake, but I wanted to make the base cake a little sweeter here so my husband (who is currently doing a Whole30) could eat it. On his pieces, BTW, I did not include the topping.
