Paleo Banana Muffins

These banana muffins will knock your socks off! They are delicious, perfectly moist and they are sweetened with nothing but banana. I've been told they are better than the real thing!


INGREDIENTS

  • 4 ripe mashed bananas
  • 4 eggs
  • 1/2 cup almond butter
  • 2 tbsp coconut oil, melted
  • 1 tsp maple extract (optional)
  • 1 tsp banana extract (optional) 
  • 1/2 cup coconut flour
  • 2T cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
DIRECTIONS
  1. Preheat oven to 350* F
  2. Put all ingredients into a large bowl and mix with a hand mixer until it becomes a smooth batter
  3. Line a muffin tin with 12 cups 
  4. Pour batter in cups and cook for 20-25 minutes (they're done when your toothpick comes out clean)

BAKER'S NOTES
  • The banana and maple extracts are optional but highly desirable as they add some depth and richness to the muffins. You can also replace with vanilla extract if you prefer. 
  • It's Okay (and perhaps even preferable) to have some lumps in your batter
  • You can substitute the almond butter with any nut or seed butter of your choice (I've had good results with cashew butter).
