If I had to pick a last meal on this earth, it'd be divinity fudge. This version is delicious, sugar-free, easy to make, and only 4 ingredients. I think you can call it divine.
INGREDIENTS
- Spoon coconut butter, maple syrup, and 4 tablespoons of the cashew milk into a microwave-safe bowl
- Microwave in 20-second increments until coconut butter is creamy and easy to stir (about 40-60 seconds)
- Add the unsweetened cocoa powder and stir with a hand mixer
- Add additional cashew milk if needed to reach a consistency like cake frosting
- Line a brownie pan with parchment paper and spoon fudge batter into the pan
- Refrigerate for about an hour, slice up and enjoy!
BAKER'S NOTES
- You can use any type of milk you'd like in this recipe
- You can also add in extracts to flavor these little guys (some ideas: peppermint extract for peppermint patty fudge or orange extract for a little orange-chocolate fudge or maple extract for a little chocolate-maple fudge). Get creative, it's your fudge!
- The beautiful thing about this fudge is that once it sets in the fridge, you can take it out of the fridge and (assuming you don't have a super hot house) and eat them at room temp.
- You should, however, make sure to keep them refrigerated as I suspect the cashew milk ingredient would make them go bad at room temperature
- You can also freeze them (and eat them straight from the freezer for a cold treat or defrost them)
